41 - To Sear the Tartar of Wine Dregs.
You should have tartar, from the dregs of red wine, which is better than white wine. Have it in large, coarse pieces, which seem full of small specks. Leave behind the powder of the tartar, which is no good. Put it in large earthenware pots of unfired clay, amongst burning coals. Leave it to singe until it does not smoke any more. When it rests calcined as chunks of a purplish black material, it is seared and prepared.
